What causes food contamination?
Food becomes contaminated when improperly handled during the growing, processing, distribution or preparation process.
Contamination can come from fruit pickers who fail to wash their hands when handling raw produce, polluted water supplies, canned food items sold after the expiration date or fresh foods allowed to sit without refrigeration. Bacteria such as E. Coli, Salmonella, Shigella or Listeria can grow in contaminated food, causing physical illness in those who consume tainted items.
While food poisoning can affect nearly anyone, not all individuals who consume contaminated food will be affected in the same way. Small children are especially vulnerable to the E.Coli bacteria, and the same spoiled hamburger meat that causes stomach discomfort in an adult may cause organ failure in a three-year-old.
